Once you choose your meal, decide on a base of greens, rice, or the seasonal grain. Then add a protein such as chicken shawarma, falafel, or lamb kefta. Next, pile on the toppings. The enormous list encompasses everything from Israeli couscous and Lebanese tabbouleh to lemon-mint carrots, sundried tomato salad, and pita-bread croutons. For the final flourish, select a sauce such as tzatziki, balsamic vinaigrette, or harissa. Round out your meal with a square of freshly baked baklava.
